Blood Orange Chia Pudding

Why drink your OJ with your yogurt when you can transform them into a healthy, filling, make-ahead breakfast?! Blood oranges are at their peak right now and their bright flavor and beautiful hue combine to delicious results in this tasty breakfast.

Ingredients

Yields 4 servings

1 cup plain yogurt (or plant-based yogurt alternative)

1 cup fresh blood orange juice

1/2 tsp orange-flower water

Pinch of kosher salt

4 TB honey, plus more for serving (or date syrup, if vegan)

1/2 cup chia seeds

4 blood oranges

Chopped pistachios or almonds (for serving, optional)

Method

  1. Whisk yogurt, blood orange juice, orange-flower water, salt, and 4 TB. honey in a medium bowl. Whisk in chia seeds, cover, and chill at least 8 hours and up to 1 day.

  2. Cut peel and white pith from oranges. Cut along sides of membranes to release segments into a medium bowl.

  3. Give pudding a good stir and divide between small bowls or mason jars, layering with some orange segments. Top with chopped nuts and remaining segments; drizzle with honey.
