Overnight Oats with Almond Butter & Berries

By now you likely know that I am a big fan of: 1) of all things breakfast. 2) batch cooking. This lovely recipe ticks both of those boxes and delivers fuel for your entire morning with very little effort. It’s also super versatile based on what you have on hand. Honestly, what’s not to love?!

Almond Butter & Berry Overnight Oats

Makes eight, 6-ounce jars:

Ingredients

  • 1 (32-ounce) container nonfat greek yogurt (use any flavor you'd like)

  • 4 cups unsweetened almond milk (or plant milk of your choice)

  • 1/4 cup chia seeds

  • 4 cups gluten-free rolled oats

  • 1 cup fresh blueberries (or any berry mix you like)

  • For the layers/toppings:

  • 8 TB of your favorite berry jam or fruit compote

  • 8 TB creamy almond butter (or your favorite nut or seed butter)

  • 8 TB Flour Craft Maple Pecan Granola

Instructions

1- Add the yogurt and almond milk to a medium bowl and stir until well combined and creamy. Stir in chia seeds, oats, and berries. Cover the bowl and place in the fridge overnight.

2- Arrange all of your clean mason jars. Fill each jar halfway with the oat mixture, then add a tablespoon of jam followed by a tablespoon of almond butter to each jar. Top with the remaining oats. Cover and place in the fridge for breakfast all week.

3- Top with a few extra fresh berries and sprinkle with granola before serving.
