Summer Melon Salad with Snap Peas and Cucumber

This salad is the perfect summer lunch or side to anything off the grill. It’s sweet, salty, crunchy. It’s exactly what you want to eat on a hot summer day.

Summer Melon Salad with Snap Peas & Cucumber

Yields 4 servings

Ingredients

2# Cantaloupe, cut into 1” cubes

4 oz snap peas, sliced on the bias

2 TB fresh Tarragon, finely chopped

2 oz Ricotta Salata, cut into 1” batons

1/2 English Cucumber, seeds removed, cut into 1” dice

1 TB lemon juice

2 TB Olive Oil

1 tsp Kosher Salt

1/2 tsp ground black pepper

Method

  1. In a large bowl, whisk the lemon juice, olive oil, salt & pepper together to emulsify.

  2. Add all ingredients to bowl, stir gently to combine. Refrigerate until ready to serve.
