The Ultimate Thanksgiving Leftovers: Turkey, Gravy & Sweet & Mashed Potato Shepherd's Pie

This simple casserole is truly an amazing way to use up most of your Thanksgiving leftovers in one dish. And, if you simply cannot eat one. more. bite. of turkey, toss this together, bake it and freeze. Defrost overnight in your fridge, cover with foil, and reheat when the mood strikes. Enjoy!

TURKEY, GRAVY & SWEET & MASHED POTATO SHEPHERD’S PIE

Yields- (1) 9x13” casserole

Cook Time- 45 minutes

Ingredients

2 cups cooked & mashed sweet potatoes

2 cups cooked mashed potatoes

1/2 cup whole milk, warm

4 cups cooked shredded turkey, both white & dark meat

1 cup turkey gravy

1 large onion, diced 1/2”

2 ribs celery, diced 1/2”

2 large carrots, diced 1/2”

Kosher Salt & Black Pepper

2 TB fresh Thyme, finely minced

Method

  1. Preheat your oven to 375F degrees. Butter a 9x13” casserole dish.

  2. In a large saute pan, cook diced onion, carrot, and celery until translucent. Season to taste with salt & pepper, add fresh thyme. Remove pan from heat and stir in shredded turkey and reserved gravy. Stir to combine and place in the bottom of the prepared casserole dish.

  3. In a medium bowl, mix together mashed sweet potatoes, mashed potatoes, and warm milk. Season to taste with salt & pepper. Spread mashed vegetable mixture over the top of the turkey mixture.

  4. Cover with foil and bake for 45 minutes until filling is bubbling up around edges. Serve with a side of leftover stuffing and top with cranberry sauce.
