Watermelon & Cucumber Salad

Yes, another melon salad recipe! Aka: the only thing I want to eat when it’s this hot outside. This is truly on repeat in our house throughout the summer months. It’s cool, light, healthy, and hydrating. It comes together in a snap and is endlessly adaptable.

Do you have tomatoes coming out of your ears in the garden? Toss them in! Love red onions? Thinly slice them and toss them in! Want some protein in there? Add a can of white beans! You get the idea…I hope you enjoy!

Watermelon & Cucumber Salad

Serves 4

1 small seedless watermelon, skin removed and diced into 1-inch pieces, about 6 cups

1 large English or Persian cucumber, seeds removed, or 2 small Japanese cucumbers

6 oz feta cheese, cut into 1-inch cubes

1/4 cup fresh mint, parsley, or basil, finely chopped

2 TB fresh lemon juice

2 TB extra virgin olive oil

coarse sea salt & freshly ground black pepper to taste

1- In a large bowl, gently toss together the watermelon, cucumber, chopped fresh herbs, lemon juice, olive oil, and sprinkling of salt & pepper. Gently fold in the feta cubes. Arrange in a serving bowl or on a platter. Serve chilled.
